This post is actually about AWL, but in BtN you only get one child and he does indeed stop growing at that point.

In AWL you have one child but you can choose its gender in the PS2 version, and s/he will gradually grow up and even get married.

You need to have bought a chicken in the first Spring to get the horse, first day of Summer. Otherwise I think you get it in Fall instead.
